Chine ON. Please be aware the chine is ON these racks. This was a mistake by the butcher and as a result these cuts are heavily discounted (from $30/lb to $15/lb). The racks require preparation with a bone saw or to be prepared as a standing rack and later removed from the bone. If you have any questions about how to prepare these please reach out.
